On the way to grad school orientation today, I saw another woman knitting on the express bus. We were both doing socks. I was making jaywalkers. I don't know what she was making.
Should I have talked to her? We both smiled and made eye-contact and went back to knitting.

No, the eye contact was sufficient. Had she wanted to be distracted from knitting, she would have said something.
If you were really curious about what she was making, it might have been ok to ask, but there was no need to continue the conversation.
